PURPOSE: To obtain a glucan having intramolecularly branching ring structures and extramolecularly branching structures and showing higher solubility and a lower solution viscosity without aging as a starch substituent by reaction of a saccharide bearing 2 kinds of glycosyl bonds with a specific enzyme. CONSTITUTION: This cyclic glucan has intramolecularly branching ring structure and extramolecularly branching structure and 50 or more polymerization degree. The polymerization degree is 50-5,000. The moiety of the extramolecularly branching structure has 40 or higher polymerization degree and the polymerization degree of each unit chain is 10-20 on the average. The polymerization degree of the moiety of the intramolecularly branching ring structure is 10-100. This glucan can be mixed with a glucan having a ring structure bearing only α-1,4-glucoside bonds. A saccharide bearing α-1,4-glucoside bonds and α-1,6-glucoside bonds is allowed to react with an enzyme which acts on this saccharide. The saccharide used is starch or amylopectin. The enzyme is a branching enzyme, D enzyme, cyclodextrin glucanotransferase (originating from Alkalophil Bacillus sp. A2-5a). |
