摘要 The invention is a heat-stable gel composition comprising about 0.1-1 % gellan gum, about 1.0-10 % milk solids, about 0.05-0.2 % calcium salt, and water. Preferably, the composition comprises about 0.15-0.5 % gellan gum, about 2.3-5 % milk solids, about 0.1-0.15 % calcium salt, and water. Optionally, compositions of the invention include about 0.01-0.1 % sequestrant.
