Methods for extracting cereal beta -glucans

Simple and efficient methods for extracting high levels of beta -glucans from cereal sources are disclosed. The method employs a strong base, such as sodium hydroxide as an initial solvent. If desired, the extract can be further purified to render a beta -glucan preparation which can be used directly or stored for future use.
