PURPOSE: To obtain the subject composition, excellent in stability for a long period, capable of imparting excellent flavor and appearance stabilities to beverages and suitable as an additive for the various beverages such as a soft drink or a milk beverage by emulsifying and solubilizing a specific oil and fat containing a carotenoid in a specified aqueous phase. CONSTITUTION: This composition is obtained by emulsifying or solubilizing (A) an oily phase prepared by dissolving a carotenoid 9146/28}e.g. the one, prepared by extracting palm oil and containing 55-70wt.% β-carotene, 20-40wt.% α-carotene and 85-97wt.% total amount of the β-carotene and α-carotene] in a medium-chain saturated fatty acid triglyceride (e.g. the one having the fatty acid composition which is a composition containing 60-80wt.% caprylic acid and 40-20wt.% capric acid] in (C) an aqueous phase containing a polyhydric alcohol such as glycerol or water in the presence of (B) a surfactant 9146/28}e.g. a (poly)glycerol ester of a fatty acid]. The average particle diameter of the component (A) is <=500nm. |
