Cooking fumes drawn down vertical tubes (6), having intakes (7) at several levels on opposing sides of the gas or electric grill-plate (2), enter a compartment (8) with inclined bottom panels (9). On these heavier particles tend to fall, encouraged by turbulence. A drain (10), under a bell-type sealing siphon, leads to a grease-trap and waste connection. A perforated stainless steel screen (11) separates this compartment from a water-treatment chamber (12) containing a distribution pipe (13) with spray nozzles (14). Fume-laden air rises up through water lying on the screen. Losing further impurities, it passes through two more filters (15, 16), of which the second (16) ensures the fan (17) operates in dry conditions. Cleaned air is expelled through a grill (19), while process water escapes through another drain (21). |
