PURPOSE: To reproduce the palatable state of a fried food by estimating the moisture distribution relating to the texture of coating having substantial influence on the palatability of the fried food from variations of the food state and controlling the heating and drying operations according to the estimated result. CONSTITUTION: This device has a drying means 10, a controlling means 11, a food variation-detecting means 12, an external inputting means 9 and a means 13 for estimating the moisture distribution in the coating. The means 13 for estimating the moisture distribution in the coating estimates a dryness distribution of the fried food during heating based on the inputted information on the food and the information obtained from the food variation detecting means 12. The controlling means 11 controls the drying means 10 so that the region from the surface of the coating of the fried food to a constant ratio of depth has a prescribed ratio of moisture content to reproduce a palatable fried food. |
