Bread morsel prodn. of the crouton type are prepd. by extruding a conventional starting mixt. (wheat flour, wheat semolina, salt, starch and spices) in a snack food extruder, cutting the extrudate, drying the prod., esp. by infra red drying, and opt. coating the prod. with a slurry of vegetable fat and spraying with spice powder.
