1520623 Chicken-broth concentrates H P KOLINSKA LJUBLJANA PREHRAMBENA INDUSTRIJA (N SOLO) 14 March 1977 [25 Nov 1976] 10642/77 Heading A2B A process for the preparation of a concentrate from waste chicken-broth formed by boiling chickens during the production of dehydrated chicken meat comprises the steps of heating the broth to a temperature of 50-55‹C, mixing the heated broth with an aqueous suspension of the enzyme papain, corresponding to 0.4 to 0.8% by weight of the pure enzyme with reference to the weight of dry material in the broth, stirring the mixture for 20 to 60 minutes at this temperature, admixing 1% at most of an anti-foaming agent and boiling the mixture for approximately 10 minutes, separating the liquid from the insoluble residue and concentrating the separated liquid. |
