The invention relates to a process for the preparation of a new product made up of an extruded mixture of a component or components rich in fibres suitable for dietary purposes, obtained from surpluses or wastes from the food industries or agricultural industries, for example tomato pomace or pea pods, modified by a pre-treatment which can include grinding and, if necessary, washing with agents that improve the properties thereof, with a starchy food component or components, for example derivatives of cereals, legumes, fruits or other plants, especially chestnut and/or maize, characterized by including a set of operations linked in such a way as to constitute a logical sequence suitable for the processing of the raw materials which make up the mixture, including pre-treatment operations on each of the components, a mixing operation and an extrusion operation, resulting in a product rich in dietary fibres and with characteristics advantageous for use in food and/or dietetic products. The starchy component can also be previously subjected to grinding and, if necessary, other prior operations. The invention also relates to the product obtained by the process of the invention, made up of an extruded mixture of a component or components rich in dietary fibres obtained from surpluses or wastes from the food industries or agricultural industries, for example tomato pomace or pea pods, and a starchy food component or components, such as, for example derivatives of cereals, legumes, fruits or other plants, especially chestnut and/or maize, the components being subjected to the process of the invention, including pre-treatment operations on each of the components, a mixing operation and an extrusion operation, resulting in a product rich in dietary fibres and with characteristics advantageous for use in food and/or dietetic products.
