LIQUID SMOKE-IMPREGNATED TUBULAR CASING FOR HYDRATE CELLULOSES FOOD

PROBLEM TO BE SOLVED: To obtain a casing useful for sausage casing which can uniformly transfer smoke color and smoke aroma to a food by impregnating the inner face of cellulose hydrate food casing with specified liquid smoke. SOLUTION: A thickener compd. (chitosan) and emulsifier (ethoxylated sorbitan monooleate) are added to acid liquid smoke of about >=2 and <4 pH (preferably 2.5 to 3), and the obtd. liquid is used to impregnate the inner face of a cellulose hydrate for casing. It is preferable to use a fiber-reinforced cellulose food casing containing no glycerin but containing alginic acid (salt).
