Device for separating and collecting egg yolk and egg white comprises an inclined plate provided with several through grooves (2, 3, 4, 5), an egg albumen collector (6) situated under the plate (1) and at the forward end (T) an egg yolk collector (7). There is also a third vessel (15) fitted to the far end of vessel (6) acting as a safety measure preventing contamination of albumen. The cracked egg is placed on edge (1'') of plate (1) and, as it moves under gravity, albumen drips into (6) via the through channels whilst the yolk flows down, passes into vessel (7) and collects on its bottom.
