Food prods., esp. sausages for frying or grilling, comprises a mixt. of rabbit meat and spices that has been finely minced and stuffed into casings. The casings are made of natural pig gut and have a dia. of 3-4 cm. The mixt. comprises (by wt.) 7.5 parts lean rabbit meat, 2.5 parts fatty rabbit meat, 0.2 parts salt, 0.05 parts spices (nutmeg, pepper, salt, sage, fennel, cloves and turmeric), 0.005 parts white pepper, 0.005 parts ground celery and opt. 0.1 parts paprika or tarragon. The sausages are blanched in water at 70 deg C for 20 min. |
