NEW JELLY FOOD AND PRODUCTION THEREOF

PURPOSE: To obtain the jelly food forming a uniform gelatinous coating film on the surface and having a fruit-like texture structure in the interior by freezing a gelatinized substance in a spherical shape, thawing and releasing water and to provide a method for producing the jelly food. CONSTITUTION: A gelatinous material in a spherical shape is frozen at >=-25 deg.C at a mild rate and ice crystal is sufficiently grown in the interior of the gel. The material is rapidly thawed and takes off from the water to obtain a spherical jelly food forming a uniform gelatinous coating film on the surface part and having a fruit-like concentric circular or layer fruit-like structure in the interior and fruit-like appearance and texture.
