PURPOSE: To continuously obtain the sugar cake smoothly meltable in the mouth, in a short time by melting a main raw material by an extruder, adding water to from crystallite and blending the crystallite with a solution of a saccharide or sugaralcohol. CONSTITUTION: Palatinose or reducing palatinose as a main raw material is heated and melted by an extruder, made into crystallite by adding water and kneaded with a solution of a saccharide or sugaralcohol. The solution of a saccharide or sugaralcohol may be palatinose syrup or trehalose syrup and is obtained by treating a solution of a saccharide withα-glucosyl transferase derived from a microorganism.
