Compsn. for inhibiting bacterial activity in food prods. comprises viable cells of a bacteroicin-producing Pediococcus sp. and cells of a bacteriocin-producing Lactobacillus sp., provided that the cells are insensitive to the bacteriocins produced by the cells of the compsn. and that the combined inhibitory effect of the compsn. is /- of the same order of magnitude as that of one of the sp. Also claimed are:(a) a compsn. for inhibiting bacterial activity in food prods. which comprises viable cells of a bacteriocin-producing Pediococcus sp. and a bacteriocin derived from a Lactobacillus sp., provided that the cells are insensitive to the bacteriocin derived from the Lactobacillus sp. and that the combined inhibitory effect of the compsn. is at least of the same order of magnitude as that of the bacteriocin-producing sp. or the bacteriocin derived from the Lactobacillus sp., and(b) a food prod. contg. a compsn. as above. |
