This invention relates to fresh plants, fresh plant parts or their fresh juices preserves, with medicinal, dietetic or cosmetic interest, which keep their natural and original properties and raise their bioavailability and are obtained by means of a sudden freezing operation by contact (e.g. immersion) with liquid nitrogen at a temperature around -200 DEG C and crystalization of the intracellular water in very small crystals, keeping the cellular walls integrity. The raw materials can be treated with solutions of substances which enhance the crystalization and the bioavailability. For use in cosmetic, dietetic and therapeutic fields.
