PURPOSE: To simplify the purification process for the reaction mixture by acylating only a specific primary hydroxy group in the saccharide moiety of a steryl glucoside selectively. CONSTITUTION: A steryl glucoside of a general formula: HO-CH2 -Gly-O-St (Gly is a residue of glucose, galactose, fructose or mannose; St is a residue of sitosterol, campesterol, stigmasterol, avenasterol, isofucosterol, brassicasterol or cholesterol) and a fatty acid are allowed to react with each other in the presence of lipase in an aqueous solution containing 0.1-10wt.% of a lower alcohol or in chloroform solution to give a steryl acylated glycoside of the general formula: R-COO-CH2 -Gly-O-St (Gly and St are same as those stated above, R is a fatty acid residue) specifically. |
