PURPOSE: To obtain the subject recovered substance, stable to preservation and heating for a long period and capable of extremely sufficiently retaining an aroma of good quality and useful as foods and drinks, etc., by distilling an animal or a vegetable raw material in the presence of ascorbic acid (Na salt) added thereto. CONSTITUTION: This method for producing a recovered substance is to distill (B) an animal or a vegetable raw material in the presence of (A) ascorbic acid or sodium ascorbate added thereto. Furthermore, the recovered substance is preferably obtained by adding about 0.02 pt.wt. component (A) to a mixture prepared by adding and mixing 1 pt.wt. component (B) (e.g. an onion) with about 10 pts.wt. water, then stirring and mixing the resultant mixture at ambient temperature for about 30min, subsequently heating the prepared mixture at about 90-100 deg.C, distilling the heated mixture for about 2hr, condensing a distilled off aromatic component, recovering the condensed component, etc. |
