NEW LIPASE AND ITS PRODUCTION

PURPOSE: To obtain a new lipase capable of selectively concentrating DHA alone from fish oil, etc. CONSTITUTION: This new lipase has the following physicochemical properties: (1) activity: hydrolyzes the ester linkage in acylglycerols; (2) substrate specificity: nonspecific for the site of the ester linkage in triglycerol, and esp. highly specific to oleic acid among fatty acids; (3) optimal pH for reaction and stable pH range: 5.5-6.0 and 4.0-6.5, respectively; (4) optimal reaction temperature and stable temperature range: 40-50 deg.C and <=40 deg.C respectively; (5) molecular weight: 52,500 (determined by SDS-polyacrylamide electrophoresis); and (6) isoelectric point: 4.9 (determined by isoelectrlc point polyacrylamide gel electrophoresis)
