PURPOSE: To provide an apparatus for heating a strip food such as a strip intermediate product of a crab-like boiled fish paste before slitting the paste in the preparation of the fish paste and to provide a method for heating the food. CONSTITUTION: This apparatus is provided with a row of electrodes having a plurality of roller electrodes arranged parallel, a feeding means 27 for supplying electric power to the electrode row, a driving means for rotating the roller electrodes, a water-permeable film covering the electrode row and a supplying means for continuously supplying a food material in the form of a strip on the water-permeable film. Electric current is applied to the strip food material supplied on the water-permeable film through the water-permeable film with the roller electrodes to heat the food with the electric current. The roller electrodes are divided into two groups and the voltage to be applied to the roller electrodes of the side to supply the food material is controlled to be higher than the voltage applied to the downstream roller electrodes. |
