PURPOSE: To obtain stabilized liquid foods or drinks, especially a composition containing an egg soln. by adding a biopolymer granular material comprising xanthan gum and guar gum. CONSTITUTION: An additive comprising biopolymer granular material containing (A) 5 to 50 pts.wt. xanthan gum and (B) 95 to 50 pts.wt. guar gum is added by 0.01 to 3 wt.% to liquid foods or drinks to obtain the compsn. of the purpose. The granular material has preferably 0.3 to 2 mm grain size and 0.3 to 0.7 apparent density. The granular material is obtd. by spraying a mixture of a powder of the component (A) and powder of component (B) to supply to a fluidized bed, further spraying water or an aqueous soln. to the powder in the fluidized bed. As for the foods or drinks to which the granular material is added, ice cream and concentrated drinks are preferable. |
