Prodn. of Streptococcus thermophilus cultures rich in beta-galactosidase

The following are claimed:(a) a process for the prodn. of a Streptococcus thermophilus culture with high beta -galactosidase ( beta gal) activity comprises culturing an S. thermophilus strain in medium contg. /-20 g/l milk protein hydrolysate, 15-30 g/l lactose and /-1 g/l yeast extract;(b) a process for producing galacto-oligosaccharides by incubating the above culture in a medium contg. 50-500 g/l lactose;(b) the opt. dried prods. of the above processes, and(c) a culture of S. thermophilus for use in the above processes.
