The system (20) comprises a tank (30) containing water (21) and potatoes (22) entrained therein. A food pump (40) transports the mixture through a relatively long accelerator conduit (50) of tapering cross section. Some of the water (21) from the output of this conduit (50) is bypassed in accordance with the setting of a valve (61). A second conduit (90) also has a tapering cross-section to align the potatoes (22). A water-operated turbine (200) carries a disc-like cutter (320) which is arranged in close proximity to the output of the second conduit (90). The cutter (320) cuts the potato (22) into helical lengths. Slitter blades (326) on the cutter further cut the potato into helical strips.
