Loaves of bread or pastries are scarified before cooking using a machine with a number of scarifying discs (2). The discs (2) are mounted in groups (1), arranged to scarify one loaf (3). At least one disc of the group (2b) rotates in the opposite sense to the other discs in the group (2a and 2c).
