PURPOSE:To automatically, hygienically and massively prepare the covered cooked rice by coating the surface of a molded rice product having a desired shape with a batter solution containing thermally coagulating protein, heating the coated molded rice product, adding a seasoning solution to the heated product and subsequently irradiating the treated product with microwaves. CONSTITUTION:The surface of a cooked rice product molded with a known cooked rice-molding machine into a desired shape is coated with a batter solution which is a slurry (slurry containing thermally coagulating protein) for forming the cover of the cooked rice. The materials and a compounding ratio thereof is dependent upon the kind of the product. A known battering machine can be employed for coating the batter solution. The coated rice molded product is heated in an edible oil with a known fries. The fried rice product is irradiated with microwaves generated from a microwave oven, etc., to instantly heat and expand the rice product, followed by immediately cooling the rice product for arranging the appearance thereof. The treated rice product is, if desired, sprayed with a seasoning solution. The above-mentioned processes are integrated for a device for preparing perfectly automatically covered cooked products such as INARIZUSHI (fried beam curd-wrapped sushi) or CHAKINZUSHI (egg-wrapped sushi). |
