PURPOSE:To obtain a fried food free from shrinking and hardening of a meat block at frying process, capable of keeping the taste and resistant to slipping off of a coat by inserting heated sticks into the inner meat block and forming vertical holes having scorching homogeneously in the meat block. CONSTITUTION:This is a fried food having a coat 1 on the surface and has a number of vertical lines of scorching 3 on a side section and a number of spotted scorching 3 having a specified space on a cross section of the inner meat block 2. An example of the process is shown below. A number of sticks heated at 200 deg.C by an electrical heater, etc., are inserted onto the surface of a meat block of 3cm in thickness and 5cm in width having 5mm space between sticks, made to remain to heat for 45sec and taken out from the meat block. The same treatment is applied on the reverse side of the meat block. Accordingly, the meat block has vertical scorching having 2.5mm space from both sides. Subsequently, a viscous spice, etc., is made to penetrate into the scorching, the whole surface of the meat block is covered with a coat and the coated material is fried for a short time to obtain the objective fried food. |
