PURPOSE:To prepare a stabilized lecithin-containing lipid emulsion by starting lecithin from forming the lamella structure. CONSTITUTION:In the preparation of a lipid emulsion using lecithin as a major emulsifier, the lipid component including lecithin is heated at first to raise up the temperature until the turbidity disappears, then the emulsification is carried out higher than the temperature at which turbidity disappears. Preferably, the emulsification is carried out at a temperature lower than 15' C over the cloud point. Accordingly, regardless of the state of the starting lecithin (liquid crystal, solid or the like), a lipid emulsion containing lecithin is obtained in uniform quality without difference between lots. |
