PURPOSE:To obtain a MISO [a fermented soybean (or rice) paste] soup, improved in keeping the quality and handleability without deteriorating the flavor even by rapid serving by placing an ingredient in a soup stock, dissolving MISO therein and then mixing gelatin in a specific proportion in the resultant soup. CONSTITUTION:This MISO soup is obtained by placing a prearranged ingredient in a soup stock containing 0.3g solar salt based on 200cc volume of the soup stock added thereto, mixing MISO in an amount of 10g based on 200cc soup stock, dissolving the mixed MISO therein, mixing gelatin in an amount of 1% based on the soup volume of the MISO soup after dissolving the MISO, reducing the temperature and solidifying the resultant MISO soup. |
