Washed potatoes are subjected to a first mechanical or steam peeling process and are blanched whole. The potatoes are then cooled and fed to a dry slicing machine to be cut into discs or small pieces. Various additives e.g. salt, oil, herbs and spices, vegetables and bacon may then be incorporated. Sorbic acid may be included for preservation and the prod. can be vacuum packed in polyethylene bags. Bag contents may be pasteurised or sterilised.
