The installation has multiple columns aligned under the chain for transporting the animals, each column supporting a vertically displaceable head carrying a clamp for holding the skin in the high displacement position of the head in order to allow skinning during downward travel, in combination with a cutter whose actuation is coordinated with the head, intended to detach the animal's skin from its fats.
