Prodn. of a grit-shaped, starch-contg. instant prod. from a starch-contg. starting material comprises subjecting the latter to heat and/or pressure in an extruder, pelletising the obtd. gel and, opt. after drying, grinding the prod. in a toothdisc grinder provided with several grinding passages. The obtd. prod. is also claimed. Grinding is pref. effected in 3 steps, namely, coarse, average and fine. The coarse residue is recycled to the 3-step grinding. The funal prod. has a particle size of 200-1200 microns and is obtd. in a 90-95% (by wt) yield. The starting material has a water content of 3-6 wt% before grinding. The final prod. has a flour content of 2-2.5wt%. USE - For instant prepn. of semolina, sauce binder and browning fat.
