PURPOSE:To obtain an excellent cooking processed food without deteriorating the unique texture or body feeling even by carrying out the sterilizing treatment of the food at a high temperature and then reheating the resultant food in eating by including a specific modified starch therein. CONSTITUTION:This cooking processed food is obtained by thermally cooking a modified starch, substantially retaining an outer shell thin film structure of raw starch grains, containing substantially nonbirefringent starch powder without a fraction of substantially >=250mum mesh opening, having 0.34-0.80g/ml apparent density, <=4wt.% content of a part soluble in cold water, 3-9ml/g swelling volume and 2-6 water holding capacity and other food materials as raw materials. The amount of the starch powder is 20-80% based on the whole grains. |
