The invention relates to a new use of a substance selected from the group consisting of sorbic acid, a derivative of sorbic acid acceptable as food additive, a salt of sorbic acid acceptable as food additive and a mixture of at least two ofthem, to increase and extend the flow of sap that can be collected from a maple tree. The invention also relates to a composition comprising the aforesaid substances and method of use of said substances.
