The encircling hoop wheel (1) rotates to truss the meat. It carries a basket (4) containing a reel of string (7) which is passed over a guide way (6, 8, 10) held on the hoop (1). This assembly winds the string (7) about the meat portion. A knotting unit (11) holds the end of the string ready to knot it after trussing and tying. The rollers (3), on which the hoop rotates, are wedge-shaped and surround it, each resting on a V-groove (2) let into the outer circumference of the hoop.
