The apparatus for roasting and softening the fish flesh such as cuttlefish, filefish and flat meat, comprises a device(40) feeding the flesh; a heater(20) positioned between the feeder(40) for heating the flesh by use of electric heating wire; a multiple pair of rollers(30) installed under the heater(20) for pressing the roasted flesh in order to soften it; a guider(50) installed between the rollers(30) for guiding the flesh to a lower direction.
