PURPOSE:To obtain an enzymic agent having sugar transfer activities simply and industrially producible from a plant as a raw material and provide a method for producing an oligosaccharide, a polysaccharide or a glycoside by using the enzymic agent. CONSTITUTION:This enzymic agent is obtained from an aqueous solution prepared by extracting an unheated sesame seed or its defatted meal with water, uses a compound containing beta-glucosyl group, alpha-glucosyl group, beta-galactosyl group or alpha-galactosyl group as a sugar donor and has sugar transfer actions. Furthermore, the method for producing an oligosaccharide, a polysaccharide or a glycoside is to react a sugar compound with the resultant enzymic agent. |
