PURPOSE:To produce a nonfreezing fruit which keeps texture, taste and flavor same as those of naturally fresh fruits by impregnating the fruit with saccharides and alcohol without destruction of the fruit tissue. CONSTITUTION:A natural fruit is soaked in n aqueous solution containing saccharides and alcohol, deaerated under a reduced pressure and the solution is concentrated under heating until the concentration of the total saccharides reaches the Brix degree of 115-80 degrees, and the pressure is restored to normal whereby the nonfreezing fruits are obtained. |
