PURPOSE:To obtain a grapefruit juice with reduced bitter taste capable of retaining a flavor and freshness, extremely readily drinkable and excellent in preservation stabilities for a long period by separating a turbid part of the grapefruit juice according to a centrifugal separation, etc., and treating the resultant juice under a high pressure. CONSTITUTION:This grapefruit juice with reduced bitter taste is obtained by separating a turbid part of the grapefruit juice according to centrifugal separation, etc., and treating the resultant juice under a high pressure of 100-400MPa, preferably 200-300MPa, for 10sec to 2hr, preferably 1min to 1hr, more preferably 10-40min. |
