PURPOSE:To obtain a refined beer, having a graceful and elegant taste without harsh tastes and further mellowness and excellent in durability in haze. CONSTITUTION:This method for producing a new beer comprises a liquor storing step for substantially slowly cooling a beer in the middle period of aging or thereafter to the vicinity of a freezing temperature of the beer in a liquor storage tank 2 in the step and then a step for passing the resultant beer cooled to the vicinity of the freezing temperature from the liquor storage tank 2 through a bypass to an apparatus capable of producing a frozen beer while keeping the fluidity and returning the resultant partially frozen beer to the liquor storage tank 2. |
