<p>PURPOSE:To provide the method for obtaining the delicious pickles by supplying the minimum limit amount of salt. CONSTITUTION:The method for producing the vegetable pickles comprises charging vegetables in a container, applying salt to the vegetables, pressing the vegetables with a pressing lid for several hours to several days in such a state as not breaking the cell membranes of the vegetables, not discharging nutrients contained in the cells of the vegetables and discharging only water contained in the cells of the vegetables through the cellar membranes of the vegetables, and subsequently taking out the pickles, when the weight of the vegetables becomes approximately one over several in comparison the weight of the non-immersed vegetables.</p> |
