发明名称 METHOD FOR SEPARATING AND RECOVERING GLUTEN AND WHEAT STARCH
摘要 PURPOSE:To separate and recover wheat starch from a starch-containing emulsion by adding water and gluten to weak wheat flour to form dough, washing starch in the dough off with water to form a starch-containing emulsion and smoothly separating and recovering gluten in good operability and high yield. CONSTITUTION:Water and gluten are added to raw material flour comprising weak wheat flour, medium wheat flour or their mixture before or in forming dough and these materials are kneaded to form a dough. Starch is washed off from the gluten by washing the dough with water to form a starch- containing emulsion and gluten left as mass is separated and recovered and simultaneously, wheat starch is separated from the emulsion and recovered.
