The openings through which the mushrooms (10, 25) pass are of sizes corresponding to those in which they have to be sorted. The openings are formed in one or more endless belts (1, 2), their dimensions in the lengthwise and transverse directions of the latter corresponding to the sorting sizes. They can be polygonal in shape, with three or more equal sides, or preferably circular. In the latter case, their diameter can be 1 to 5 mm less than the desired sorting size. Where the belt has a section 919) running between inlet-end and return drums (4, 5), the return drum diameter can be greater than 100 mm and preferably greater than 200 mm.
