The openings through which the mushrooms (10, 25) pass are of sizes corresponding to those in which they have to be sorted. The openings are formed in one or more endless belts (1, 2), their dimensions in the lengthwise and transverse directions of the latter corresponding to the sorting sizes. They can be polygonal in shape, with three or more equal sides, or preferably circular. In the latter case, their diameter can be 1 to 5 mm less than the desired sorting size.
