The present invention provides a structured paste which is substantially free of LAS and which is suitable for processing into a high bulk density, high active granular detergent. Surfactant pastes of the present invention have a viscosity of at least 10 Pa.s (measured at 70 DEG C and 25 sec<-1>) and comprise: from 30 % to 90 % by weight of anionic surfactant; from 0 % to 50 % by weight of nonionic surfactant; from 0.5 % to 20 % by weight of either a polymeric cationic material or a polar amino acid; and from 1 % to 40 % by weight of water.
