A machine (10) for compressing bacon slabs has a frame (12) with a support surface (24) having front, rear and opposite side edges. Separate hydraulic actuated pressure elements (44, 46) are mounted on the frame adjacent at least the rear and opposite side edges of the supporting surface. A second hydraulic fluid pressure element (48) is mounted on the frame over the support surface. Fluid pressure sensing elements (54) and displacement and measuring elements (56) are on each of the first and second pressure elements. A computer circuit (52) is operatively connected to the first and second pressure elements (44, 46), the fluid pressure sensing elements (54), and the linear displacement and measuring elements (56). The computer circuit (52) includes a control (58) to move the first and second pressure means (44, 46) to measure the length, width and height of the bacon slab by moving those components into contact with the bacon slab.
