PURPOSE:To prepare dried instant noodles having excellent taste, flavor and palatability and low calorific value by applying a heated and cooled edible oil to a raw noodle strings prepared by conventional process before or after the steaming or boiling of the noodle and drying the noodle with superheated steam. CONSTITUTION:An edible oil is heated preferably at 120-160 deg.C and then cooled. The heat-treated oil is applied to raw needle strings prepared by conventional method at a rate of preferably 5-10wt.% based on the noodle before or after the steaming or boiling treatment of the noodles. The oil-coated noodles are dried by contacting with superheated steam of preferably 150-180 deg.C for preferably 30-120sec to obtain the objective dried instant noodles. |
