Process for peeling potatoes comprises subjecting the potatoes to a mechanical or steam peeling process, cutting the peeled potatoes into small pieces (cubes, slices or strips), and sorting out defective pieces in a sorting station. Also claimed is a process as above in which the potato pieces are blanched or cooked, cooled, and opt. grated to produce a material for making potato dumplings (Klosse). |
