PURPOSE:To provide a process for the preparation of raw noodles having low water-content by using a twin-screw extruder. CONSTITUTION:Raw noodles having low water content are prepared by adjusting the water content of the noodle dough to 10-25wt.% and extruding the dough with a twin-screw extruder in place of using a single screw extruder used in the preparation of conventional extrusion-molded noodles such as pasta. Since the obtained raw noodle has low water-content, it is stable during distribution and dry noodle, etc., can be prepared therefrom in short drying time. |
