PURPOSE:To provide a method for production of a noodle containing chips of buckwheat leaves, capable of producing a noodle from dough prepared by adding chips of buckwheat leaves to wheat flour, buckwheat flour or another grain flour. CONSTITUTION:Green leaves or the whole leaves of buckwheat are collected, washed with water and then dried until the water content is reduced to <=10wt.%. The dried leaves are subsequently roughly ground according to the conventional method to obtain chips of buckwheat leaves having about 8 to 30 mesh. The resultant chips of buckwheat are added to dough during the course of production of a noodle by using wheat flour, buckwheat flour or another grain flour, thus producing the objective noodle containing chips of buckwheat leaves. This production method can produce a noodle containing chips of buckwheat leaves, having the nutritive value essential to buckwheat and excellent in visual appearance, i.e., not a monotonous one of a uniform green color but an excellent one containing partly scattered greencolored spots and capable of visual recognition of the leaves. |
