PURPOSE:To provide a baking oven in which automatic preheating of bread stuff can be conducted in compliance with variation of internal temperature. CONSTITUTION:In a baking oven A composed of a baking oven main body 1, a bread baking case 13 installed inside the main body 1, and an opening/ closing lid 3 at an upper part of the main body 1, in which bread stuff containing water is charged into the bread baking case 13 and kneaded to form bread dough and the bread dough is fermented and baked to make bread, an internal temperature detecting means 17 and a preheating control means for comparing an internal temperature detected value from the detecting means 17 with a set temperature to bring the temperature to the set value are provided.
