PURPOSE: To provide the method for surely producing bound herring spawn aggregate (herring roe) through a more simplified and more shortened working process for Atlantic herring spawn to be easily separated. CONSTITUTION: This method includes a cleaning process for granularly separated herring spawn, binding process for cleaned herring spawn provided by the cleaning process and process for quickly cooling and freezing the non-cleaned separated herring spawn at freezing temperature before the cleaning process while keeping the bound state of wet cleaned herring spawn for a sufficient period until the bound herring spawn assembly is provided during the binding process for cleaned herring spawn provided through a salt cleaning process by composing the cleaning process, in which the granularly separated non-cleaned herring spawn is cleaned with salt, by immersing the herring spawn in the chloride- sodium aqueous salt solution of chloride-sodium solution with the concentration of sodium contained in a salt solution from 4 to 20% during this binding process. |
